About this recipe:A recipe from my mum, slightly modified, this is one of my most comforting winter dishes. The lemon, curry and tomatoes make it particularly flavourful.
4 tablespoons olive oil
1 onion, minced
700g pork fillet
salt and ground black pepper
1 teaspoon curry powder
1 garlic clove, crushed
1 tablespoon minced fresh parsley
1 lemon, juiced
4 plum tomatoes, chopped

Heat 3 tablespoons of the olive oil in a casserole over high heat, and cook and stir the onion until translucent, about 3 minutes.
Pour in the remaining olive oil and add the pork fillet. Cook, turning often until browned on all sides, about 5 minutes. Season with salt and pepper. Stir in the curry powder, the garlic, and the parsley and cook until fragrant, about 1 minute.
Stir in the lemon juice and tomatoes. Reduce the heat to medium low, cover and simmer for 15 minutes, stirring every few minutes.
This is sooooo yummy and I believe not many calories as well. I was looking for an easy recipe to cook myself but my husband ended up cooking it instead. He wasn't so sure about the juice of 1 lemon, however this was the wow factor! We have this meal all the time now with 1 can of tomatoes instead of fresh toms. Could not believe how simple and quick this dish was, and yet so tasty.
I added an extra 2 cloves of garlic and used a good quality tin of tomatoes, as I was doubling the recipe. It served 6 comfortably, and everyone commented how delicious it was. Will be cooking this again. - 07 Oct 2013
