    About this recipe: A recipe from my mum, slightly modified, this is one of my most comforting winter dishes. The lemon, curry and tomatoes make it particularly flavourful.

    Serves: 4 

    • 4 tablespoons olive oil
    • 1 onion, minced
    • 700g pork fillet
    • salt and ground black pepper
    • 1 teaspoon curry powder
    • 1 garlic clove, crushed
    • 1 tablespoon minced fresh parsley
    • 1 lemon, juiced
    • 4 plum tomatoes, chopped

    1. Heat 3 tablespoons of the olive oil in a casserole over high heat, and cook and stir the onion until translucent, about 3 minutes.
    2. Pour in the remaining olive oil and add the pork fillet. Cook, turning often until browned on all sides, about 5 minutes. Season with salt and pepper. Stir in the curry powder, the garlic, and the parsley and cook until fragrant, about 1 minute.
    3. Stir in the lemon juice and tomatoes. Reduce the heat to medium low, cover and simmer for 15 minutes, stirring every few minutes.
