A simple and delicious vanilla cream that you can use as a filling for cakes or pastry cups, or as a topping for butterfly buns or cupcakes.

- 200ml milk
- 1 teaspoon vanilla extract
- 75g icing sugar
- 3 egg yolks
- 1 tablespoon cornflour or flour

- Combine the milk and vanilla extract; bring to the boil.
- Beat egg yolks and icing sugar until light and fluffy. Stir in the cornflour. Gradually pour in hot milk, stirring constantly.
- In a double boiler, cook the mixture over medium high heat for 2-4 minutes, stirring constantly. Reduce heat and whisk the mixture for few more minutes. Set aside to cool before using as required.
