About this recipe:This recipe comes from my husband's grandmother, a tasty souffle-like baked cheese dish. With next to nothing, you can make a dish that easily feeds a family of 4. Serve with a small salad or alongside ratatouille.

Preheat the oven to 200 C / Gas 6. Butter a gratin dish.
Stir together the plain flour, milk, Emmental cheese, and nutmeg in a bowl. Season with salt and pepper. Let the mixture rest for a few minutes.
In another bowl, beat the eggs lightly. Stir the eggs into the flour mixture, and pour into the prepared gratin dish.
Bake in the preheated oven until puffed and golden, about 20 minutes. Turn off the oven, and leave in the oven for a few minutes before serving.
