The world's easiest banana muffins

    If you have never made muffins before, this is a recipe you want to try!Chocolate chips and/or nuts make a lovely addition.

    Makes: 15 muffins

    • 220g plain flour
    • 1 teaspoon bicarbonate of soda
    • 115g butter, melted
    • 150g caster sugar
    • 2 eggs
    • 1/4 teaspoon salt
    • 60ml cream
    • 3 ripe bananas, mashed

    Prep:10min  ›  Cook:15min  ›  Ready in:25min 

    1. Preheat the oven to 175 degrees C / gas 3. Lightly grease muffin tins or line with paper cases. This mixture will make about 15 or 16 muffins.
    2. In a medium bowl, beat all ingredients together until well mixed.
    3. Spoon batter into muffin cups, about 3/4 full. Bake for 10-15 minutes until a skewer inserted into the centre comes out clean.

    Excellent recipe although i switched to self raising flour as i had no plain in. They came out lovely and full!  -  04 May 2014
