About this recipe:These madeleines are indescribably delicious, aromatic and were devoured in less than an hour! You can flavour them with cinnamon, vanilla, lemon, honey - my children cut them in two and spread them with Nutella®!
Makes: 30 madeleines
125g caster sugar
150g plain flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 pinch salt
125g butter, melted

Preheat the oven to 200 C / Gas 6. Butter a madeleine tin or use a silicone madeleine mould.
Beat the eggs with the caster sugar until pale in a bowl.
Whisk together the flour, baking powder, cinnamon and salt in another bowl, and stir in the egg mixture. Stir in the melted butter. Divide the mixture between the prepared moulds, filling each half full.
Bake in the preheated oven until puffed and golden, about 10 minutes. Allow to cool for 5 minutes before turning the madeleines to cool on a wire rack.
I keep these in a large plastic container, or in a biscuit tin.
