This delicious vegetarian aubergine lasagne is layered with two sauces and contains lovely flavourful aubergine in the place of meat. A little time-consuming but well worth the effort!
I absolutely love this recipe. It's very hard to find a tasty vegetarian lasagne recipe but every time I've made it I get so many compliments. Since I've found this recipe it's the only one I use to make lasagne. The only ingredients I add are fresh thyme instead of oregano and sometimes Quorn if I have some in the freezer. - 23 Nov 2017
