Breaded chicken breasts

    Sometimes simple is most delicious. Serve these crisp breaded chicken breasts with mash or chips and a green salad for a comforting meal.

    Serves: 3 

    • 1 egg, lightly beaten
    • black pepper, to taste
    • 1 teaspoon chicken stock granules
    • 1 teaspoon Worcestershire sauce or Maggi® seasoning
    • 2 chicken breast fillets
    • 2 tablespoons plain flour
    • 2 tablespoons dried breadcrumbs
    • 4 tablespoons vegetable oil

    1. Beat the egg, pepper, stock granules and Worcester sauce or Maggi® together in a bowl.
    2. Cut the chicken breasts in half, and sandwich between cling film. Pound lightly with a rolling pin. Remove from the cling film and dip in the mixture of egg and seasoning. Marinate for at least 2 hours.
    3. Combine breadcrumbs and flour on a plate then toss the chicken in the breadcrumbs to coat.
    4. Heat the oil over medium-high heat in a large frying pan. Fry chicken on each side until golden brown and no longer pink in the centre. Serve immediately.
