Jola's apple cake

This is a nice moist cake, topped with apple slices that's very easy to make. See my suggestion below for using other fruits.

- 300g plain flour
- 2 teaspoons baking powder
- 150g caster sugar
- 4 eggs
- 250g butter, softened
- 2 tablespoons icing sugar
- 2 apples

- Preheat oven to 180 C / Gas 4. Grease a 23cm springform cake tin and lightly flour the base.
- In a large bowl, mix plain flour, baking powder, caster sugar, eggs and softened butter together until smooth.
- Spoon the cake mixture into the prepared cake tin; arrange apple slices in a pattern on top.
- Bake the cake in preheated oven for 50 minutes. Set aside to cool. Sprinkle with icing sugar before serving.
Suggestion:
I sometimes make it with berries, plums or peaches when they are in season. If you decide to make it with berries, it might be better to separate the eggs; mix yolks in with other cake ingredients. Then beat whites until stiff and fold into the cake mixture before spooning it into the cake tin. This will help prevent the berries from sinking.
