Spinach filling for crepes

    This delicious and light filling transforms plain crepes into a great main dish. Serve rolled up in crepes with a little salad on the side for a complete meal. Makes enough filling for 10 crepes.

    Serves: 10 

    • 800g fresh spinach leaves
    • 2L water
    • 4 eggs
    • 2 cloves garlic, minced
    • 1/2 teaspoon salt
    • 1 pinch pepper
    • 1 teaspoon plain flour

    1. Rinse the spinach and remove any tough stalks. Chop finely, cover with the water and cook just until wilted. Drain.
    2. In a large pan, combine the spinach, eggs and garlic. Season with salt and pepper. Simmer until water has evaporated. Sprinkle with flour and mix until thickened. Use to fill your favourite crepes.
