Rinse the spinach and remove any tough stalks. Chop finely, cover with the water and cook just until wilted. Drain.
In a large pan, combine the spinach, eggs and garlic. Season with salt and pepper. Simmer until water has evaporated. Sprinkle with flour and mix until thickened. Use to fill your favourite crepes.
