Crème de mûre (Blackberry liqueur)

    Some homemade fruit liqueurs make you wait for weeks or even months, not this one. This spiced blackberry liqueur is ready in 20 minutes.

    Serves: 40 

    • 1L pure unsweetened blackberry juice
    • 10 whole cloves
    • 1/2 cinnamon stick
    • 1 lemon, zested
    • 500g caster sugar
    • 1L rum (40%)

    1. In a large saucepan add blackberry juice, spices, lemon zest and sugar. Slowly bring to the boil. Stir to dissolve the sugar.
    2. Let cool. Strain to remove spices and add the rum.
    3. Pour in a sterilised bottle and seal. Store in a cool and dark place.
