1 tablespoon almond paste (marzipan)
1 pinch salt and ground black pepper
your choice of spices (nutmeg, paprika, etc.)

Bring a pot of water with a steamer insert to the boil. Cut leaves off the cauliflower, peel stem and cut into pieces. Rinse well and steam until tender, about 20 minutes.
In a blender combine cooked cauliflower, milk, almond paste and any spices you'd like. Blend together until liquid is very light, smooth and fluffy. You might want to do this in batches so your blender does not overflow.
