Tropical rum cocktail

    This tropical cocktail is made with fruit juices, white rum, fresh lime, banana and kiwi fruit makes enough for a party crowd. I use white rum from the French West Indies (Martinique, Guadeloupe) ihich is available online or at speciality shops but other white rum works well too.

    Serves: 10 

    • 750ml white rum
    • 750ml orange juice
    • 1.5L tropical fruit juice
    • 2 limes, juiced
    • 1/2 banana, mashed
    • 1 kiwi fruit, peeled
    • 2 tablespoons golden syrup
    • 1 vanilla pod

    1. Pour rum and fruit juice into a large bowl. Add lime juice and banana mash and mix together. Cut a big slice of kiwi, crush and add and stir in the golden syrup. Cut the two ends of the vanilla bean and add. Pour mixture into cocktail shaker and shake vigorously.
    2. Taste and add rum or a bit of water, as desired. Chill in refrigerator for 24 hours. Remove vanilla bean and stir well before serving. Use the rest of the kiwi to decorate the glasses.
