Chicken breast with chanterelle mushrooms and thyme

    Serve this simple French chicken and mushroom dish with baby potatoes and a green salad for an impressive meal! A Gigondas or Rhone wine, something a little spicy, will go beautifully with this meal.

    Serves: 4 

    • 1 tablespoon olive oil
    • 500g fresh chanterelle mushrooms, cleaned
    • 4 chicken breast fillets (free range if possible)
    • 10 sprigs fresh thyme, chopped
    • salt and freshly ground pepper to taste

    1. Heat oil in a large pan over medium heat; add mushrooms and cook until golden brown and juice from mushrooms has created a sauce.
    2. Add chicken and thyme to pan; reduce heat to low and cook for about 10 minutes or until chicken is no longer pink inside and juices run clear. Season with salt and pepper and serve immediately.
