About this recipe: A deliciously different Polish cake with a nut-filled meringue and apples between to layers of airy pastry.


Serves: 12 

  • Base
  • 375g plain flour
  • 2 teaspoons baking powder
  • 220g margarine or butter
  • 125g icing sugar
  • 4 egg yolks
  • 2 tablespoons soured cream
  • Apple filling
  • 10 medium apples, peeled and grated
  • 2 tablespoons vanilla sugar
  • 1 teaspoon ground cinnamon
  • Meringue
  • 4 egg whites
  • 6 tablespoons caster sugar
  • 100g desiccated coconut
  • 100g walnuts, chopped
  • 100g raisins

  1. Preheat the oven to 180 C / Gas 4.
  2. For the pastry, combine flour, baking powder and sugar. Rub in margarine until crumbly. Add egg yolks and cream and mix until incorporated. Divide in half.
  3. Roll out one half and line a 25x36 cm baking tin. Spread over the grated apples (squeeze out any excess juice first), then sprinkle with cinnamon and sugar.
  4. Beat egg whites with sugar until stiff peaks form. Fold in coconut, walnuts and raisins.
  5. Spread the meringue mixture over the apples, cover with other half of pastry.
  6. Bake for 1 hour. Allow to cool. Dust with icing sugar before serving, if desired.
