Caribbean chicken meatballs

    Chicken meatballs made with fresh lime, coconut milk and spices of the French West Indies. Colombo powder spice blend ('poudre de colombo') can be found online or at speciality shops. Serve with rice for a tasty and unique meal.

    Serves: 4 

    • 600g chicken breast fillets
    • 1 clove garlic
    • 2 onions, sliced
    • 1/2 bunch fresh parsley
    • 1 teaspoon paprika
    • juice of 1 lime
    • salt and ground black pepper to taste
    • olive oil for frying
    • 300ml coconut milk
    • 1 glass water
    • 1 tablespoon poudre de colombo

    1. Cut chicken breasts into chunks and place in a food processor with garlic, onions, parsley, paprika, lime juice, salt and pepper. Mix into a smooth paste and form into balls.
    2. Heat oil in a medium frying pan and brown meatballs for about 10 minutes, until golden brown. Add coconut milk and water and sprinkle with Colombo powder. Adjust seasoning to taste and simmer over low heat for 15 minutes.

    Make your own Colombo powder by combining 2 tablespoons ground cumin; 2 tablespoons ground coriander; 1 tablespoon black or brown mustard seeds; 1 tablespoon fenugreek seeds; 1/2 tablespoon ground black pepper; 1/2 teaspoon ground cloves; 3 tablespoons turmeric. Use as is or grind till smooth in a mortar and pestle.
