Grilled apricot prawns

    This is my friend's recipe which is a surprisingly delicious way to serve prawns. A green salad pairs perfectly with this starter for two people.

    • 150g prawns, peeled and deveined
    • 1 tablespoon apricot jam
    • a drizzle of olive oil
    • 1 dash Worcestershire sauce
    • 1 pinch dried parsley
    • salt and freshly ground black pepper
    • 2 slices baguette for serving

    1. In a bowl combine prawns with jam, olive oil, Worcestershire sauce, parsley; season with salt and pepper. Mix and toss to coat; cover and marinate for 5 minutes.
    2. Preheat oven grill and place marinated prawns (reserving marinade) on grilling rack; cover with foil and grill for about 3 to 4 minutes per side (they should be opaque).
    3. Spread remaining apricot jam mixture on fresh baguette slices and arrange grilled prawns on top.
