Citrus prawn cocktail

    Quick to prepare, this seafood cocktail with citrus fruit and avocado is fresh and light starter for a special dinner

    Serves: 4 

    • 1 large pink grapefruit, peeled and segmented
    • 1 large orange, peeled and segmented
    • 1 large avocado, peeled and diced
    • 80g natural fromage frais
    • 1 (170g) tin crab meat, drained
    • 1 teaspoon Dijon mustard
    • 1 teaspoon fresh chopped dill
    • 1 teaspoon mayonnaise
    • 4 large prawns, shelled and deveined

    1. Put grapefruit and orange segments in a bowl. Add the avocado and coat stir gently to coat with citrus juices to prevent browning.
    2. To make dressing, combine fromage frais with mustard, mayonnaise and dill in a small bowl; mix well and add to avocado mixture; finally, mix in crab meat.
    3. Spoon mixture in tall glasses and decorate with prawns. Chill before serving.
