Storecupboard chocolate cupcakes

    Chocolate cupcakes and fudge frosting all out of the storecupboard, baked and frosted in less than an hour.

    Makes: 12 large cupcakes

    • 240g (2 cups) plain flour
    • 60g (1/2 cup) cocoa
    • 1/2 teaspoon bicarbonate of soda
    • 1/4 teaspoon caster sugar
    • 225g (1 cup) sugar
    • 180ml (3/4 cup) mayo
    • 240ml (1 cup) warm water
    • 1 teaspoon vanilla extract
    • For the frosting
    • 2 tablespoons plain flour
    • 65g (1/2 cup) dry milk powder
    • 30g cocoa
    • 110g caster sugar
    • 240ml water

    1. Preheat the oven to 180 C / Gas 4. Grease a cupcake tin.
    2. Sift dry ingredients together. in a separate bowl whisk wet ingredients. Combine together until smooth. Spoon into the prepared muffin tin.
    3. Bake in the preheated oven until a skewer inserted near the centre comes out clean, 15 to 20 minutes.
    4. Meanwhile combine the 2 tablespoons flour, milk powder, 30g cocoa, 110g sugar, and water. Microwave on full power for 3 to 5 minutes and whisk in 120ml prepared milk.
    5. Frosting can be placed over hot or warm cupcakes, and left to set on the side or in the fridge.


    The addition of 2 tablespoons cream coconut makes an excellent tasting frosting! If you would rather have a vanilla caramel flavor frosting, add 1 teaspoon vanilla extract, and replace 1/2 the sugar with brown sugar.
