Plain chocolate chip cookies

    This is a basic recipe for chocolate chip cookies that you can jazz up with chopped nuts or almonds.

    Serves: 4 

    • 85g caster sugar
    • 1 1/2 teaspoons vanilla sugar
    • 1 egg
    • 85g butter, softened
    • 150g plain flour
    • 1 teaspoon baking powder
    • a pinch of salt
    • 100g chocolate chips (or cooking chocolate)

    1. Preheat oven to 180 C / Gas 4. Lightly grease a baking tray or line with greaseproof paper.
    2. In a medium bowl beat sugar and vanilla sugar with egg. Add softened butter and mix, then stir in flour, baking powder and salt. Finally stir in chocolate chips and mix until chips are well integrated into mixture.
    3. Using two spoons, form small heaps of cookie mixture, flattening slightly with spoons, and place on baking tray. Make sure cookies are well spaced apart, they will expand in size.
    4. Bake in preheated oven until edges are nicely browned, 10 to 12 minutes,
