Super simple and simply delicious pear cake enriched with almonds. Delicious for a mid-morning or afternoon pick me up with coffee or tea.
For more almond flavour, add 1/2 teaspoon of almond extract to the cake mixture. You can also sprinkle flaked almonds over the bottom of the tin before adding the pears.
I am an unashamedly lazy baker and a big fan of cakes that involve "putting all ingredients into a mixer" but come out tasting like lots of time was put in. This was excellent - moist, tasty and one that I will definitely do again. I chopped up the pear into small pieces and mixed it in with the cake mix. Delicious. - 21 Mar 2015
I chopped the pears up also as I had some ripe from my garden, I also put some raisins and saltanas that I had stewing in port, came out beautifully moist - will be making this again !! - 22 Sep 2015
