Makes: 8 to 12 bars
1 ripe banana
1 large egg
1 tablespoon walnut or hazelnut oil
1 tablespoon honey
120g cooked porridge
40g quinoa flakes
50g dried cranberries
50g crushed hazelnuts

Preheat oven to 180 C / Gas 4 and lightly grease a 20cm square tin or a small baking tray.
In a small bowl, mash banana with a fork. in another medium bowl beat egg with oil and honey. Add porridge, quinoa, cranberries, hazelnuts and mashed banana; mix well.
Transfer the mixture to the prepared tin and flatten with the back of a spoon to about 2cm thick. Lightly score into bars or squares.
Bake in preheated oven for 12 to 14 minutes, depending on how chewy or crisp you'd like the bars to be. Allow to cool, then slice and serve.
