Baked chocolate dessert

    This baked gluten free chocolate dessert is almost like fudge except it foregoes the butter.

    Serves: 8 

    • 250g plain chocolate
    • 100g cream cheese
    • 1 tablespoon cornflour
    • 4 eggs, separated
    • 2 1/2 tablespoons caster sugar
    • 1 pinch salt

    1. Preheat oven to 180 C / Gas 4. Lightly grease and flour a 23cm round cake tin. Put chocolate in a heatproof bowl set over a pot with hot water. or in a double boiler, and melt.
    2. In a large bowl beat egg yolks with sugar until mixture is light and fluffy. Stir in cornflour, cream cheese and salt. At the end stir in melted chocolate.
    3. In a small bowl beat egg whites with a pinch of salt until stiff peaks form. Gently fold into chocolate mixture. Add mixture to prepared tin.
    4. Bake in the preheated oven until a skewer inserted in the centre comes out clean, about 20 minutes.
