Kheer (Indian rice pudding)

    Recipe for a beautiful Indian kheer, the fragrant rice pudding dessert. Delicate spices like cardamom and saffron flavour this pudding along with almonds and coconut.

    Serves: 6 

    • 500ml full fat milk
    • 100g rice, rinsed
    • 3 teaspoons desiccated coconut
    • 100g caster sugar
    • 3 teaspoons ground almonds
    • 3 strands saffron, soaked in water
    • 1 teaspoon crushed cardamom pods

    1. In large saucepan bring milk to the boil. Add rinsed rice and coconut and mix. Reduce heat to low, cover and simmer for about 15 minutes or until rice is cooked.
    2. Stir in sugar, almonds, saffron water and cardamom and mix well (if mixture is too thick, add a bit of milk and simmer another 5 to 10 minutes).
    3. Serve hot or cold, according to taste.
