Kid friendly mussels in tomato sauce

    Here is a recipe for mussels that will appeal to children: there is no beer or white wine in the sauce.

    Serves: 6 

    • 1 large knob of butter
    • 3 cloves garlic, minced
    • 2 shallots, chopped
    • 1kg fresh mussels, washed, debearded and drained
    • 400g passata
    • 1 tablespoon double cream (optional)

    1. In a large saucepan melt butter and sauté garlic with shallots until soft, 2 to 3 minutes. Add mussels and cook for 3 to 4 minutes to stew. Remove mussels from pan and place in serving dish.
    2. Pour passata into pan and heat through, then add cream and mix well. Pour sauce over the mussels and serve.
