Kid friendly mussels in tomato sauce

Here is a recipe for mussels that will appeal to children: there is no beer or white wine in the sauce.

- 1 large knob of butter
- 3 cloves garlic, minced
- 2 shallots, chopped
- 1kg fresh mussels, washed, debearded and drained
- 400g passata
- 1 tablespoon double cream (optional)

- In a large saucepan melt butter and sauté garlic with shallots until soft, 2 to 3 minutes. Add mussels and cook for 3 to 4 minutes to stew. Remove mussels from pan and place in serving dish.
- Pour passata into pan and heat through, then add cream and mix well. Pour sauce over the mussels and serve.
