Polish orange almond cake

    This is a delicious orange and ground almond cake, known as mazurek in Poland, that's typically eaten at Easter. Decorate with chocolate icing or sprinkle with toasted flaked almonds.

    • 225g unsalted butter, softened
    • 250g caster sugar
    • 225g ground almonds
    • 1 or 2 drops of vanilla extract
    • 1 tablespoon orange zest
    • 5 egg whites
    • 175g plain flour

    1. Preheat the oven to 180 C / Gas 4. Lightly grease a rectangular traybake tin.
    2. Beat butter and sugar together with an electric mixer at high speed for 5 minutes. Add ground almonds, vanilla extract and orange zest; mix well.
    3. In a separate clean bowl, beat the egg whites until stiff. Gradually add to the butter mixture alternately with flour, mixing in gently.
    4. Spread the batter evenly into prepared tin. Bake in preheated oven for 40 minutes, or until a skewer inserted into the centre of the cake comes out clean. Allow the cake to cool in the tin on a wire rack before serving.
