Sausage and pepper letcho

    Letcho is a stew from Hungary, popular in several Eastern European countries. This letcho calls for smoked Polish sausage, adding wonderful depth of flavour.

    Serves: 4 

    • oil for frying
    • 1 onion, sliced
    • 600g peppers (different colours), sliced
    • 2 teaspoons paprika
    • salt and pepper to taste
    • 500g tomatoes, diced
    • 300g smoked Polish sausage, sliced
    • 2 cloves garlic, minced

    1. Heat a generous glug of oil in a large pan and saute onion until softened. Add peppers, season with paprika, salt and pepper, then cover and simmer for 10 to 12 minutes.
    2. Stir in the tomatoes and cook, stirring occasionally until the liquid has evaporated. Add sausage and garlic, mix and cook for another 10 minutes. Serve over rice or with bread.
