White bean stew with kielbasa sausage

    Bean stew in winter is one of life's great pleasures. Plan to make this stew a day in advance giving plenty of time for the beans to soak.

    Serves: 5 

    • 500g dried white beans (cannellini)
    • 300g kielbasa sausage, sliced
    • 200g lean smoked bacon, sliced
    • 2 bay leaves
    • 4 allspice berries
    • 1 clove garlic, minced
    • 50g tomato puree
    • 1 teaspoon marjoram
    • 1 teaspoon caster sugar
    • oil, as needed
    • salt and pepper, to taste
    • 1 tablespoon lard or butter
    • 1 tablespoon plain flour

    1. Place the beans in a large pot and cover with warm water (there should be twice as much water as beans). Leave to soak for 24 hours.
    2. The next day, drain beans. Cover beans with ample water, add the sausage, bacon, bay leaves, allspice and garlic. Stir and simmer for 1 hour.
    3. Stir in tomato purée, marjoram and sugar, season with salt and pepper to taste and simmer for another few minutes.
    4. In a separate pan melt the lard and add in flour. Stir to obtain a paste. Add this to the stew and cook for 1 to 2 minutes to thicken. Remove from the heat and serve.
