Sweet toasted pumpkin seeds

    If you carve a pumpkin, this is a good way to use the seeds. Nice to snack on in front of the telly, and the kids love them!

    Makes: 1 small bowl

    • seeds from a pumpkin - washed and dried on kitchen paper
    • 2 teaspoons caster sugar
    • 1 teaspoon ground cinnamon
    • 1 pinch ground nutmeg
    • 1 tablespoon butter

    1. Preheat the oven to 180 C / Gas 4. Grease a baking tray. Spread the pumpkin seeds on the tray in a single layer.
    2. Bake in the preheated oven until golden, about 20 minutes.
    3. Meanwhile, stir the caster sugar, cinnamon and nutmeg together in a small bowl.
    4. Melt the butter in a small pan. Stir in the roasted pumpkin seeds and coat well with the butter, then stir in the spice mixture. Spread out on the baking tray to cool.

    I had to cover the tray lightly with tin foil to stop the seeds from flying all over the oven. Rather messy to eat but very tasty.  -  04 Nov 2015
