Yummy pineapple fruit cake

    Easy to make and people who have tried the cake in the past say it is yummy! Baking time varies depending on the type of oven you have. Won't last long. Makes a lovely boiled fruit cake. Very moist.

    Serves: 8 

    • 1 (454g) tin crushed pineapple, strained
    • 300g mixed dried friut (including cherries and raisins)
    • 225g caster sugar
    • 100g soft margarine
    • 1 teaspoon bicarbonate of soda
    • 1 teaspoon mixed spice
    • 2 eggs, beaten
    • 100g plain flour
    • 100g self-raising flour

    1. Preheat the oven to 170 C / Gas 3. Line a 18-20cm cake tin with baking parchment.
    2. Place the strained pineapple, mixed dried fruit, sugar, margarine, bicarbonate of soda and mixed spice into a saucepan.
    3. Bring to the boil and cook for 3 minutes, stir around and then take off to cool for 3 minutes.
    4. Add the eggs, plain flour and self-raising flour and stir into the mixture. Pour the mixture into the prepared cake tin.
    5. Bake in the preheated oven until a skewer inserted near the centre comes out clean, about 1 1/2 hours.

    Very easy to follow and make. The pineapple was great for structure, as using gluten free ingredients. I will definately make again. Will add nuts on top next time, probably almonds.  -  25 Aug 2015


    This is a wonderfully moist fruit cake and easy to prepare and make. It is now one of my husband's favourites. I would recommend it to anyone.  -  20 Nov 2013
