Herb baked salmon

    A foolproof baked salmon dish that is easy to do but big on flavour. If you don't fancy dill, you could try other fresh herbs, or even a mixture of dill, parsley and spring onion.

    Serves: 6 

    • 30g fresh dill, chopped
    • 3 tablespoons olive oil
    • 1 tablespoon honey
    • 1 lemon, juiced
    • 1 teaspoon ground coriander
    • 2 to 3 cloves garlic, minced
    • salt and black pepper to taste
    • 1 (1kg) salmon fillet

    1. Combine the chopped dill, olive oil, honey, lemon juice, coriander, garlic, salt and pepper.
    2. Rinse the salmon fillet and pat dry with kitchen paper. Lay skin side down on a large piece of cling film. Top with the dill mixture. Wrap well in cling film and marinate for 30 minutes.
    3. Preheat the oven to 220 C / Gas 7.
    4. Remove cling film and place salmon with marinade skin side down on a baking dish. Bake in the oven for 12 to 15 minutes, or until the salmon flakes easily with a fork.
