About this recipe: A foolproof baked salmon dish that is easy to do but big on flavour. If you don't fancy dill, you could try other fresh herbs, or even a mixture of dill, parsley and spring onion.

  • 30g fresh dill, chopped
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 lemon, juiced
  • 1 teaspoon ground coriander
  • 2 to 3 cloves garlic, minced
  • salt and black pepper to taste
  • 1 (1kg) salmon fillet
