Preheat a barbecue for medium heat.
Whisk together the lemon juice and zest, olive oil, mustard, honey, vinegar, lavender and herbes de Provence. Set aside half of the sauce. Brush the remaining sauce over the chicken breast fillets. Season with salt and pepper.
Barbecue the chicken breast fillets, turning often, until no longer pink at the centre and skin is crisp. Serve with the reserved sauce.
