For a healthier option, cut the rounds of bread and using a clove of garlic, rub each slice then place the rounds onto a baking tray and bake in a moderate oven until golden and brown. These can be made ahead several hours and placed in an airtight container. When ready to assemble, carry on from step 3 and add a tablespoon of olive oil to the tomato mixture.
