Salami, ham, tomato and basil crostini

    Perfect appetiser with an apperitif or to serve for a light lunch with crumbled goats cheese on top and a crisp salad.

    Makes: 12 crostini

    • 1 French baguette
    • olive oil for shallow frying
    • 10 slices Milano salami
    • 6 slices good quality ham
    • 4 vine-ripened tomatoes
    • basil leaves, chopped
    • sea salt to taste

    1. Cut 12 slices of bread into 5mm thick rounds.
    2. Heat about 1cm oil in a fry pan and shallow-fry the bread rounds on each side until golden and crisp. Drain on absorbent paper.
    3. Dice the salami and ham. Dice the tomatoes into very small pieces and sprinkle over sea salt and mix in to taste.
    4. Top each round with salami, ham and tomato. Garnish with chopped basil and serve at once.


    For a healthier option, cut the rounds of bread and using a clove of garlic, rub each slice then place the rounds onto a baking tray and bake in a moderate oven until golden and brown. These can be made ahead several hours and placed in an airtight container. When ready to assemble, carry on from step 3 and add a tablespoon of olive oil to the tomato mixture.
