Corned beef paella

    Hot paella using corned beef. Great when the fridge is empty of meat! It's a one-pot meal using ingredients from the storecupboard.

    Serves: 4 

    • 1 large red onion, minced
    • 1 red pepper, minced
    • 4 garlic cloves, minced
    • 1 small red chilli, minced
    • vegetable oil
    • 1 large tin corned beef, chopped into small chunks
    • 1 teaspoon ground tumeric
    • 1 teaspoon paprika
    • 250g white long grain rice
    • 1 tablespoon Worcestershire sauce
    • 2 "splodges" tomato ketchup
    • 900ml (1 1/2 pt) vegetable stock

    1. Fry onions, garlic, pepper and chilli for about 5 minutes in a little vegetable oil.
    2. Add corned beef and fry for 3 to 5 minutes. Add turmeric and paprika and cook for a minute. Then stir in the rice, Worcestershire sauce and ketchup and cook for about a minute.
    3. Pour in the stock and bring to the boil. Simmer for around 15 to 20 minutes, until rice is fully cooked. May need to top up a bit with water if sticking to bottom of frying pan.
