Heat the oil in a deep casserole, and cook and stir the sausages, onion and garlic until lightly browned, about 5 minutes. Pour in the red wine, vegetable stock and tomatoes with their juice, and stir in the herbs. Season with salt and pepper. Reduce the heat and simmer for 30 minutes.
Stir in the cannellini beans and simmer for 15 minutes more. Serve with grated Parmesan, if desired.
