Tuscan bean and sausage casserole

    Cooking sausages with beans is an easy way to add a lot of depth to the dish. Choose an Italian sausage for an easy boost in flavour, or choose a plainer one if you prefer.

    Serves: 4 

    • 1 tablespoon sunflower oil
    • 500g sausages, cut into bite-size pieces
    • 1 onion, chopped
    • 2 garlic cloves, crushed
    • 125ml red wine
    • 200ml vegetable stock
    • 1 (400g) tin chopped tomatoes
    • 8 sage leaves, chopped
    • 2 bay leaves
    • salt and ground black pepper
    • 2 (400g) tins cannellini beans, drained and rinsed
    • grated Parmesan cheese, to serve (optional)

    1. Heat the oil in a deep casserole, and cook and stir the sausages, onion and garlic until lightly browned, about 5 minutes. Pour in the red wine, vegetable stock and tomatoes with their juice, and stir in the herbs. Season with salt and pepper. Reduce the heat and simmer for 30 minutes.
    2. Stir in the cannellini beans and simmer for 15 minutes more. Serve with grated Parmesan, if desired.
