Pan fried lemon chicken breast

    I call this dish lemony lemon chicken because it is made with lemon slices and lemon juice. I make this almost once a week, and often cut the chicken into chunks to reduce the cooking time.

    Serves: 5 

    • 1 tablespoon olive oil
    • 3 chicken breast fillets, cut into pieces
    • 2 lemons, juiced
    • 2 lemons, sliced

    1. Heat the oil in a frying pan over high heat, and sear the chicken breast fillets until they are golden, about 3 minutes on each side. Reduce the heat and pour in the lemon juice.
    2. Place the lemon slices over the chicken, cover and simmer until the chicken is no longer pink at the centre, about 10 minutes.
