About this recipe:This is an easy vegetarian one pot stew full of fresh vegetable flavours. Easy to adapt for the slow cooker if you have a little more time or want to get this stew on before work.
2 carrots, sliced
2 root parsley, sliced
100g green beans
1 red pepper, seeded and cut into strips
1 onion, chopped
1/2 tin sweetcorn
1/2 tin green peas
1 small jar tomato purée
2 tablespoons ketchup
1/2 teaspoon paprika
1/2 teaspoon oregano
salt and pepper, to taste

In a large saucepan or casserole dish, combine the carrot, root parsley, beans and red pepper and cover with a small amount of lightly salted water (or you can use a vegetable stock cube instead of the salt). Simmer for about 20 minutes until the vegetables are tender.
Add the onion, sweetcorn, peas, tomato purée, ketchup, paprika, oregano and seasoning. Mix well and simmer for 15 minutes. Serve hot.
If parsley root is unavailable or out of season, you could play around with substituting it for parsnips, celeriac or turnips. However keep in mind that this will give a different flavour result.
To adapt for the slow cooker, preheat the slow cooker to Auto or Low setting then combine all of the ingredients in the dish. Cook on Low setting for 5 to 6 hours until the vegetables are tender and the flavours have developed. Check the stew occasionally and top up with a little water if necessary.
