About this recipe: This is an easy vegetarian one pot stew full of fresh vegetable flavours. Easy to adapt for the slow cooker if you have a little more time or want to get this stew on before work.
If parsley root is unavailable or out of season, you could play around with substituting it for parsnips, celeriac or turnips. However keep in mind that this will give a different flavour result.
To adapt for the slow cooker, preheat the slow cooker to Auto or Low setting then combine all of the ingredients in the dish. Cook on Low setting for 5 to 6 hours until the vegetables are tender and the flavours have developed. Check the stew occasionally and top up with a little water if necessary.
