Salmon and olive tartare

    This salmon tartare dish is both elegant and delightful. Present simply with lemon wedges and some posh crackers or vegetable crisps.

    Serves: 2 

    • 200g fresh skinless salmon fillet, chopped
    • 2 tablespoons capers, chopped
    • 50g black olives, stoned and chopped
    • 1 onion, chopped
    • 1 lemon, cut into wedges

    1. Arrange the ingredients, except the lemon wedge, in alternating layers in a glass bowl. Cover with a plate and then invert and flip upside down. Remove the bowl. Arrange the lemon slides around the salmon tartare and serve.
