    About this recipe: A traditional Georgian stew made with lamb, mutton or beef combined with potatoes, aubergine, peppers and herbs.

    Serves: 4 

    • 500g cubed lamb, mutton or beef
    • 1 onion, chopped
    • 500g potatoes, cubed
    • 3 aubergine, cubed
    • 2 cloves garlic, finely chopped
    • 1 tablespoon tomato puree
    • 2 tomatoes, sliced
    • 1 red or green pepper, chopped
    • 15g chopped fresh herbs (parsley, dill, basil, coriander)
    • salt and pepper to taste

    1. In a heavy casserole dish or clay pot with lid, add all ingredients in the following layers: meat, onion, potatoes, aubergine, garlic, tomato puree, tomatoes, pepper and herbs. Season each layer with salt and pepper to taste as you go. Pour over a few spoonfuls of water, then cover.
    2. Place in a preheated 180 C / Gas 4 oven for 2 hours.
