In a heavy casserole dish or clay pot with lid, add all ingredients in the following layers: meat, onion, potatoes, aubergine, garlic, tomato puree, tomatoes, pepper and herbs. Season each layer with salt and pepper to taste as you go. Pour over a few spoonfuls of water, then cover.
Place in a preheated 180 C / Gas 4 oven for 2 hours.
