Russian waffles

    These waffles are made with twarog, an East European curd cheese similar to quark, which give the waffles a delicate texture.

    Serves: 4 

    • 3 eggs
    • 120ml milk
    • 150g twarog or quark
    • 3 tablespoons caster sugar
    • 3 tablespoons butter
    • 1/4 teaspoons salt
    • 140g flour
    • 1/2 teaspoon baking powder

    1. Separate whites from the yolks. Beat the egg whites until they form stiff peaks.
    2. Mix the flour together with salt and baking powder.
    3. Beat the yolk together with sugar, add melted butter, milk, and twarog.
    4. Combine the yolk mixture and flour. Carefully fold in the egg whites so the mixture does not deflate.
    5. Bake in the waffle maker till browned, about 5 minutes.


    If you cannot find twarog or quark, you can use well drained Greek yogurt instead.
