Squid with summer vegetables

    You can speed up the preparation of this quick dinner even more if you use squid rings.

    Serves: 4 

    • 500g squid (thawed if frozen)
    • 1 onion
    • 2 tablespoon olive oil
    • salt and pepper to taste
    • 1 pepper, seeded and cut into strips
    • 2 courgette, diced
    • 2 tomatoes, diced
    • 3 cloves garlic, minced
    • 120ml white wine
    • 1 bunch fresh basil, chopped

    1. Rinse and clean the squid. Slice the tubes into rings, and the tentacles into strips.
    2. Slice onions into half-rings. Heat olive oil and fry onion till softened, about 3 minutes. Add salt to taste.
    3. Add pepper and courgette and fry for a few further minutes.
    4. Add tomatoes and garlic, add salt and pepper, pour in white wine and let come to the boil.
    5. Now add sliced squid. Fry till it is just cooked, about 5 minutes. Do not overcook
    6. Sprinkle with chopped basil.
