Chicken Chakhokhbili (Georgian herb chicken)

    Chicken Chakhokhbili is a famous Georgian chicken dish with lots of fresh herbs and tomatoes.

    Serves: 8 

    • 1 (1.5kg) whole chicken or chicken pieces (legs, thighs, wings, breasts)
    • 100g butter
    • 2 (400g) tins peeled tomatoes
    • 3 to 4 white onions, minced
    • 1 large bunch fresh coriander, minced
    • 1 large bunch fresh parsley, minced
    • 1 large bunch fresh dill, minced
    • 1 tablespoon salt
    • ground chili flakes to taste
    • ground pepper to taste
    • paprika powder to taste

    1. If you are using a whole chicken, cut it up into pieces. Heat 1/4 of the butter and fry chicken pieces until light golden.
    2. Add onion and herbs and the rest of butter. Fry for a further 10 minutes.
    3. Crush tomatoes with a fork and add to the chicken. Add salt and spices and simmer until chicken is tender and detaches from bones. about 1 hour.
