Chicken breasts with peppers and oranges

About this recipe: This chicken dish is super fast and very tasty. Best served over noodles or rice for a complete meal.


Serves: 4 

  • 2 tablespoons olive oil
  • 500g chicken breast fillets, cubed
  • 1 onion, sliced into rings
  • 1 red pepper, seeded and cut into strips
  • 1 garlic clove, finely chopped
  • 100ml sherry
  • 2 tablespoons soya sauce
  • 1 tablespoon runny honey
  • 1 teaspoon cornstarch
  • 2 oranges, peeled and chopped

  1. Warm the oil in a frying pan over a medium heat then add the chicken and cook and stir for 3 minutes. Add the vegetables and continue to cook and stir for 5 minutes, until the chicken is no longer pink in the centre.
  2. Combine the sherry with the soya sauce, honey and cornstarch and mix. Pour the mixture over chicken in the pan and cook, stirring frequently, until the sauce thickens.
  3. Finally add in the oranges and cook for a further 1 to 2 minutes then serve immediately.
