Smoked salmon and cucumber canapes

    Smoked salmon, cream cheese and cucumber combine to create this easy yet sophisticated year-round party food, ideal for Christmas, New Year or cocktail parties.

    Serves: 25 

    • 450g smoked salmon, thinly sliced
    • 250g cream cheese
    • 1 bunch fresh dill, chopped
    • 2 tablespoons lemon juice
    • ground black pepper, to taste
    • 2 large cucumbers, sliced thickly

    1. Place a double sheet of cling film onto a work surface then place sliced salmon in a thin layer on top of cling film, layering the pieces to avoid gaps.
    2. Combine cream cheese with lemon juice, pepper and finely chopped dill in a bowl and mix well. Spread the filling on top of the salmon.
    3. Using the cling film to help you, roll up tightly into a log then wrap in cling film and chill in the fridge for at least 2 hours.
    4. Remove the salmon roll from the fridge and slice into rounds 2cm thick with a sharp knife. Arrange the cucumber rounds onto a serving platter then top with a salmon round. Serve chilled.
