Makes: 20 stuffed mushrooms
20 button mushrooms
2 tablespoons butter
1 onion, finely chopped
150g goat's cheese
150g hard cheese of your choice, grated
black ground pepper, to taste
1 pinch caraway seeds

Preheat the oven to 200 C / Gas 6.
Remove the stalks from the caps, chop and place in a bowl. Arrange the caps on a lightly greased baking tray.
Melt the butter in a frying pan over a medium heat and and add the onions. Cook and stir for 4 to 6 minutes until soft then add the chopped mushroom stalks and cook and stir for 5 minutes. Remove from the heat and allow to cool for a few minutes.
Into the onion mixture, add the goat's cheese, grated cheese, pepper and caraway seeds and mix well. Carefully spoon the mixture into the prepared mushroom caps.
Bake for about 20 minutes or until the mushroom caps are tender and the filling is hot through. Remove from the oven and serve warm or allow to cool before serving.
