    About this recipe: These tasty and delicate feta and prawn filo pouches are an ideal addition to any party spread. Perfect for special party events such as Christmas and New Year.

    Ingredients
    Serves: 6 

    • 180g feta cheese
    • 120g cooked prawns, finely chopped
    • salt and pepper, to taste
    • 2 cloves garlic, minced
    • 6 sheets filo pastry
    • 3 tablespoons butter, melted

    Method

    1. Preheat the oven to 200 C / Gas 6.
    2. In a bowl, combine the feta cheese, chopped prawns, seasoning and garlic and mash well to mix.
    3. Lay a sheet of filo pastry (about 50x35cm) on a work surface and brush the side facing you lightly with melted butter then place the second sheet on top and repeat. Repeat until all six sheets are stuck together. Cut the sheets into 12 squares then pair up the squares to form 6. Join each pair together with melted butter, offsetting the corners so that they are easier to gather into a parcel.
    4. Place 1 teaspoon of filling in the centre of each square then gather up the corners to form a pouch and squeeze together gently to form a seal.
    5. Bake in the preheated oven for about 10 minutes, until golden brown. Remove from the oven and serve warm or allow to cool before serving.
