These lavender biscuits are elegant, dainty and sophisticated, just perfect for Mother's Day or other special occasion.

Ingredients

- 120g butter
- 100g caster sugar
- zest of 1 lemon
- 180g plain flour
- 1 tablespoon dried lavender flowers

- Preheat oven to 150 C / Gas 2. Line a baking tray with baking parchment.
- In a bowl, cream together the butter, sugar and lemon zest. Add the flour and lavender and bring the mixture together into a ball.
- Turn out onto a lightly floured work surface, or sandwich between two sheets of baking parchment, and roll out to 5mm thickness. Cut into biscuits using your favourite biscuit cutters.
- Bake the biscuits in the preheated oven for 10 to 12 minutes until firm. Remove from the oven and allow to cool on the tray for a few minutes before transferring to a cooling rack to cool completely.

A great recipe! Very easy to make; great results. However, the lavender taste wasn't very strong so would use more next time. I made these for my mum, using culinary lavender given to me by my mother-in-law (decorated with fresh lavender from my garden). Thank you for sharing this brilliant recipe! - 03 Aug 2016
