Turkey stuffed kohlrabi

    This stuffed kohlrabi is tender, full of flavour and very tasty. In this dish the kohlrabi is filled with minced turkey, mushrooms and herbs and is a nourishing supper for the whole family.

    Serves: 4 

    • 4 medium kohlrabi
    • oil, as needed for cooking
    • 1 onion, chopped
    • 3 mushrooms, chopped
    • 100g cooked rice
    • 250g minced turkey
    • 1/2 bunch dill, chopped
    • 1 teaspoon herbes de Provence
    • 1 teaspoon dried basil
    • salt and pepper, to taste
    • 2 teaspoons unsalted butter

    1. Wash, peel and trim the kohlrabi, scoop out the flesh and set aside.
    2. In a frying pan, heat the oil and cook and stir the onion and mushrooms until soft.
    3. In a bowl, combine cooked rice, turkey, dill, onion and mushrooms, mix well. Season with herbs and salt and pepper.
    4. Stuff the kohlrabi with the mixture, place in a saucepan, cover with water to half of their height, add 2 tablespoons butter to the pan and simmer covered for approximately 25 minutes until tender.
