Honey glazed BBQ salmon

    Salmon is absolutely phenomenal on the BBQ and this recipe is a firm family favourite in our household. Serve with some seasonal vegetables or a nice crisp salad.

    Serves: 4 

    • 4 salmon fillets
    • 3 tablespoons olive oil
    • 60ml runny honey
    • juice of 1/2 lemon
    • 3 cloves garlic, minced
    • 2 tablespoons chopped fresh dill
    • thyme, to taste
    • herbes de Provence, to taste
    • marjoram, to taste
    • salt and pepper, to taste

    1. Pat the salmon dry with kitchen paper. In a small bowl, combine oil, honey, lemon juice, garlic, dill and herbs, mix well. Season with salt and pepper to taste.
    2. Rub the fillets with the marinade and wrap in tin foil. Marinate in the fridge for 2 hours.
    3. After 2 hours, heat the barbecue to a medium-high temperature.
    4. Cook the fish for 25 minutes until it is an even pink colour throughout and flakes easily with a fork. Remove from the heat and serve.
