About this recipe: Smoked mackerel and eggs are a match made in heaven, especially in an omelette. Enjoy this tasty dish as the centrepiece to your next brunch.


Serves: 2 

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 1 tomato, peeled and chopped
  • 1 smoked mackerel
  • 5 eggs, beaten
  • 3 tablespoons unsalted butter
  • 1/2 teaspoon dried thyme
  • 1/2 bunch chopped fresh chives
  • 1 teaspoon chopped fresh dill
  • salt and pepper, to taste

  1. In a frying pan, heat the oil and add the onion. Add the tomato and cook and stir for a few minutes. Flake the fish and discard any bones.
  2. In a bowl beat the eggs, fish and onion and tomato.
  3. Melt the butter in a frying pan then pour in egg mixture. Sprinkle with thyme, chives and dill and season with salt and pepper to taste. Cover and cook until set. Serve immediately.
